Hello again Mandy’s Recipe Box readers, this is Tracy from Made From Pinterest. This month I have a super yummy soup recipe for you! I wish I had a big bowl of this creamy soup last Saturday when I took my son to Tahoe to earn his Snow Sports merit badge. While he was out skiing I stayed in the lodge with my laptop to get some blogging done. After a couple of hours my stomach reminded me I had forgotten to pack food for the day.

When my son finally came in from skiing we were both starving! There was only one place open to get food and soup wasn’t on the menu! We ended up with an order of chili cheese fries and hot dogs. Yummy, yes….healthy, NO!

Italian Sausage Soup

Ingredients
  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage, casing removed
  • 3 cloves garlic, minced
  • 1 onion, diced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon crushed red pepper flakes, optional
  • Kosher salt and freshly ground black pepper, to taste
  • 5 cups chicken broth
  • 1 bay leaf
  • 1 pound red potatoes, diced
  • 3 cups baby spinach
  • ¼ cup heavy cream
Directions
  1. In a large saucepan or stockpot heat olive oil over medium heat.
  2. Add and cook Italian sausage until browned, around 3-5 minutes.
  3. Make sure to crumble the sausage as it cooks.
  4. Drain off all excess fat, season with pepper and salt to taste.
  5. Add garlic, onion, oregano, basil and red pepper flakes.
  6. Cook and stir frequently until onions become translucent, about 2-3 minutes, season again with pepper and salt to taste.
  7. Stir in the chicken broth and bay leaf and bring to a boil. Add potatoes, cook until tender, around 10 minutes.
  8. Stir in spinach until it begins to wilt 2-3 minutes. Mix in the heavy cream until it is heated through, season with pepper and salt if desired.
  9. Serve immediately.
