I bought a lemon pepper flavored Rotisserie chicken and used the meat for this pasta dish. It made life so much better. It took no time at all to make my Chicken and Pesto with Zucchini and Tomatoes. Try this one out and let me know what you think!
- 1 (8.5 oz) package Barilla Ready Pasta
- 6 oz jar Barilla Pesto
- 1 cup cooked chicken, diced
- 1 cup zucchini, diced
- ¾ cup cherry tomatoes, halved
- 2 Tbsp olive oil
- In a large skillet, heat olive oil over medium high heat. Add zucchini and tomatoes. Cook until zucchini is tender, about 5 minutes.
- Meanwhile, microwave Bariila Ready Pasta for 60 seconds according to package directions.
- Add chicken, pasta and pesto to the zucchini and tomatoes. Stir to coat evenly and allow to heat through.
- Serve.
