These come from Kraft Foods. I liked them but I think next time will use pinto beans instead of the black beans. It's just my preference, but you can make them just the way I did. I bet you're thinking, "BBQ Rice?" It's really pretty good. Give it a try...BBQ Chicken and Rice1 lb. boneless skinless chicken breast, cut into strips 2 cups instant white rice, uncooked 1 cups Barbecue Sauce 1-1/2 cups water 1 cup canned black beans or pinto beans, drained 1-1/2 … [Read more...]
Chicken and Broccoli Casserole
Broccoli is my favorite vegetable, I believe. Right there with fresh corn on the cob. My mother-in-law made this dish for a church dinner and I went home and looked up the recipe on Kraft Food's website. I made it for dinner the next night since my family wasn't at the dinner to taste it. So good... And I got to use my new Le Creuset baking dish I received from CSN Stores. I love it! It is my new favorite thing! It is stoneware and so easy to clean. It can go in the dishwasher, too. Love it and … [Read more...]
Asian Chicken Salad
Asian Chicken Salad is a staple at any potluck dinner we have. It's one of my favorite salads and I crave it a lot! The first time I had this was when my grandma made it for a dinner a long time ago. I crave it all the time now. I love the flavor and crunch of the toasted almonds and sesame seeds. It's best to make this and chill for about 5 hours for the flavor to get into the chicken. It gets all nice and juicy. The cabbage and almonds will soften if left too long so it's perfect for … [Read more...]
Chicken Noodle Soup
Alright, fine. I will post a "healthy" recipe today. And Oh.My.Goodness. That's all I can say about this soup. I got it from the Pioneer Woman and she knows her stuff. It is so comforting and soul warming. I could eat this at least once a week. It's that good wonderful. I tweaked it a tad to suit my tastes. I must say I absolutely recommend using a whole fryer chicken (you can buy them already cut up) because it makes it taste so much better than just using boneless, skinless chicken breasts. … [Read more...]
Chicken Pot Pie
This is one of the ultimate comfort foods to me. Chicken Pot Pie is just scrumptious. Especially this one. I use corn, peas, carrots, and potatos in mine. You can use whatever veggies you like. Green beans, etc. The topping doesn't get all soggy from being on the filling, which I wouldn't mind, but some would. It is a whole meal in one unless you wanted to add a salad to it. But who needs that when all the yummy goodness is right here? Printable Version Chicken Pot Pie Filling: 4 Tbsp. … [Read more...]

Zucchini and Chicken Stir Fry
Another zucchini recipe? Yes, I know but tis the season, right? A girl made this at our church party and it was excellent. She made hers in a dutch oven in the coals of a fire, but I made this in a skillet on my stove. Both are great, but I prefer the dutch oven method.Zucchini and Chicken Stir Fryoil1 onion, chopped1 or 2 pounds of boneless, skinless chicken breast cut into chunks1 zucchini, cut into chunks1 can pineapple tidbits (I drained mine, but I'm not sure if she did...)teriyaki … [Read more...]
