That's just wrong. So when I make something that they all like, it's a total keeper at our house. This Loaded Mac and Cheese is one … [Read more...]

Easy Goulash
This Easy Goulash is one of the meals I make most when I am short on time. It's such a quick and easy recipe. The hardest part is browning the ground beef! Honestly, I make this dish a lot. All you need to do is brown the ground beef in a large skillet and add the rest. It's a great dump recipe as I like to call it. Just dump it all in and let it heat through. My daughter had a report in Geography class on Hungary. So she told everyone her mom would make Goulash. All her classmates asked, … [Read more...]

Beef Enchilada Bake
This Beef Enchilada Bake will be a hit with your family. Everything you love about Enchiladas in casserole form layered with tortilla chips. One of the very first recipes I ever had of my mother in law's was Enchilada Casserole. It was really good and hit the spot for that Mexican food craving. The only thing I didn't like about it was the corn tortillas. I'm just not a fan. I am, however, a super fan of tortilla chips so I altered her recipes about a year ago and only wished I had done … [Read more...]
Shepherd’s Pie Recipe
I love this Shepherd's Pie Recipe when I need a quick and hearty meal. It's got everything you need in one dish: meat, green beans, mashed potatoes and cheese! I can't even tell you how many nights I say, "Oh crap. It's 5 pm and I haven't started dinner!" We eat around 6 pm at our house so our kids can start bedtime stuff at 7. Since they get up super early to catch the bus into town (an hour bus ride for my older two kids) they go to bed at 8 pm. When those days happen (the oh crap … [Read more...]
Beef Stew
There's nothing quite like a bowl of hearty Beef Stew. A slice or two of some french bread makes for a comforting meal on a blustery day. I also have a giveaway with Hammer Stahl cutlery after the recipe! It's starting to feel like fall! I've not yet turned on my heaters, but we do have an electric heater in the living room going to take the chill off and I love it. Yay for that crisp chill in the air! I am sure I will be singing a different tune come winter. But for now nothing … [Read more...]
Easy Chili
This Easy Chili really lives up to it's name. It's the perfect companion to corn bread and a chilly evening. This is my go-to Chili recipe. It's a dump and cook kind of recipe. You just brown the ground beef, add everything else and let it simmer for an hour. It really can't get any easier. Or tastier. I love eating this along side homemade cornbread fresh from the over and drizzled with honey butter. With Halloween coming up, this is a great before/after Trick-or-Treating meal. Easy … [Read more...]
