Buttermilk Blueberry Pancakes

Growing up, my grandma made us Buttermilk Pancakes every morning that we were at her house. It is still my favorite breakfast. I butter them and sprinkle with sugar and roll them up and inhale eat them up. I also love this blueberry version way too much. I am glad my kids like it, too. Otherwise I would have to eat them. all.by.myself. I would do it,too!
Buttermilk Blueberry Pancakes

1 c. flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 egg
1 c. buttermilk*
2 Tbsp. oil
1 c. fresh or frozen blueberries (if using frozen, don’t thaw)
In a bowl, combine flour, sugar, baking powder, and baking soda and salt. Make a well in the center and add the egg, buttermilk, and oil. Stir til just moistened. Gently fold in blueberries. Pour onto greased griddle and cook. Top with butter and maple syrup. Or whatever else you fancy!
* If you don’t have buttermilk you can make sour milk instead. Just measure out 1 Tbsp. lemon juice or vinegar in a measuring cup and fill the rest with milk. Let it sit for about 5 minutes before using.

    Those looks so delicious! I wish my kids would eat blueberries. That is something I order when I go out for breakfast though. YUM!
