Linzer Cookies

These Linzer Cookies are such a classic Christmas cookie that I can’t imagine Christmas without them! You can change the flavor of the jelly for different variations.

Linzer Cookies

I absolutely love these Linzer Cookies. They are a delicate cookie with finely chopped almonds in the dough that make for delicious cookies to melt in your mouth. I’ve made a short cut version, but these are the traditional way to make them. My aunt makes Linzer Cookies every year and I always look forward to them. They are one of my very favorite Christmas cookies.

These Linzer Cookies are such a classic Christmas cookie that I can't imagine Christmas without them! You can change the flavor of the jam for different variations.

Serves: 12
Ingredients
  • 1¼ cup butter
  • ⅔ cup sugar
  • 1½ cups almonds, ground
  • 2 cups all-purpose flour
  • ¼ tsp. cinnamon
  • 6 Tbsp. strawberry jelly or jelly of your choice
  • Garnish: powdered sugar
Directions
  1. Blend butter and sugar until light and fluffy.
  2. Stir in almonds (I just put my almonds in a food processor and pulse until finely ground), cinnamon, and flour.
  3. Cover and refrigerate for at least one hour.
  4. On a lightly floured surface, roll out half of the dough at a time to ⅛ inch thick. Cut out 24 circles with a 2½ inch round cookie cutter. Cut out centers of circles with a ½ inch mini cookie cutter; leave the remaining circles uncut.
  5. Place one inch apart on baking sheets.
  6. Bake at 325 degrees F for 10-12 minutes until golden.
  7. Cool completely on a wire rack.
  8. Thinly spread jelly over solid circles; sprinkle cut cookies with powdered sugar and sandwich over jelly.

    Hi Mandy….the cookies look delicious but the recipe isn’t showing how much butter to use….only flour sugar and almonds! How much butter?

      And there’s no brown sugar, that’s what I messed up. I put that instead of butter, darn it!

    Sorry for another question! In the directions it says cinnamon but in ingredients it doesn’t say how much! Is cinnamon supposed to be in there? Thanks! I have the linzer cookie cutter set and I really want to try these….they look awesome!

    Hi Mandy. I don’t see any egg in the receipt, is that correct? In the short cut version there 1 eggyolk…so I wonder.
    and what kind of sugar do you use?

      That is correct. I used granulated sugar in these cookies.

    My wife made this recipe yesterday, grinding her own almonds, and threw the dough in the garbage after leaving it in the refrigerator for a couple of hours, as the dough didn’t come together at all. This morning she ran out and bought almond meal, remade the recipe, and, although it looks somewhat better, I think it’s headed for the garbage as well.
    Looking at a few other recipes for linzer cookies, they all have eggs or egg yolks as an ingredient, which I think would make all the difference. Did you forget this ingredient?

      I’m sorry it’s not working out for you! I have made this many times and it always works. I’ve had others make it and tell me how much they love it so I know the recipe is not the issue. I don’t know what else to tell you. There are no eggs or yolks called for in the recipe.
