Eggless Eggnog

I hope you are enjoying all the holiday recipes floating around the internet as much as I am. I love the food this time of year! It’s just so cozy and wonderful.

I have recipes on my blog using Eggnog. I love baking with the stuff. But I am not a huge fan of drinking it straight. Today I made my own Eggless Eggnog. I like it! I can drink it! And there are no eggs in it.

 

It comes from Gooseberry Patch’s cookbook The Christmas Table.

Eggless Eggnog

Ingredients
  • 1 box (3 oz.) instant Vanilla pudding mix
  • 4 C. milk
  • 4 C. heavy cream
  • ½ C. sugar
  • 2 tsp. Vanilla extract
  • 2 or 3 tsp. Rum extract
  • Garnish: Whipped cream and nutmeg
Directions
  1. In a large bowl (or a blender if it will fit) stir together dry pudding mix and 1 C. milk.
  2. When mixture begings to thicken, add remaining ingredients except garnish.
  3. Mix well.
  4. Cover and chill.
  5. Garnish individual servings with whipped topping and a sprinkle of nutmeg.
  6. Makes ½ gallon.

    I really don&#39;t have a favorite beverage! I&#39;m diabetic, so I try to drink low sugar stuff – to be able to enjoy the other treats a little more. 😀 My whole family, however, really does like eggnog and considers it a real treat! 🙂 Thanks for the recipe, and the generous giveaway!     I want to make the eggnog coffee cake. If I make it to the finishing step can I freeze it or do I need to do the topping and glaze after it comes out of the freezer?

    I&#39;m in LOVE with this. Maybe I don&#39;t like eggnog all too much because the idea of drinking raw eggs is about as appealing as sticking a fork in my eye. But this nog looks fantastical, Mandy!

    This looks really good! I was wondering if there is anything I can substitute for the rum extract. I would like to stay away from the alcohol that is in the rum, if possible.

    Do you know the nutritional value for this recipe? Sounds good. Wondering what it would taste like if you used lower fat dairy products, have you or anyone tried that?

      I don’t know the nutritional value. I’m sure you could find a tool online for that.
