Cheesy Rice and Chicken Casserole will make mouths happy. Cheese, rice and chicken make for an amazing dish.
Casseroles are my friends. They are usually made up of a bunch of yummy stuff all put together and baked. The ones I love best have cheese. Lots and lots of cheese. This dish does not disappoint. I’m sure it will be on your make again (and again) list. Plus it’s one of my most viewed recipes of all time!

Mandy – this dish looks irresistible! I'm with you when it comes to cheesey – can't go wrong. As I layed in bed this morning I was thinking about what I was going to add to Totally Tasty Tuesday! =) Have a great day!
My computer is being funny today.. I left a comment earlier but dont think it went through. This casserole sounds perfect! Casseroles are my friends too : ) YUM!
Oh goodness that is so ooey gooey yummy :). Thanks for the link up 🙂 I'm your newest follower.
This looks so-o-o-o good! Your printed recipe says you used Zatarain's Rice. The only yellow rice I saw at the store today from Zatarain's looks like it has red & green peppers in it. Is this the kind of rice you used? Thanks!
Cindi, yes that is the kind I used. Sorry! As long as it says "Yellow Rice" then that's it. There is also a Mexican version in a yellow foil looking bag.
my comment must not of went thru!
We are having this tonight, minus the chicken add tuna. We will see how it is with tuna (we are having chicken 3 other times this week)!
This is SO good! I added broccoli to mine & it tasted great! My 4 yr old LOVES it & even eats the broc in it!
I am making this recipe tonight, but was unclear as to what to do with the butter. Do I melt it and add it to the mix, or let it soften and add it in? I left it out this time because I wasn't sure what to do. Hopefully it will still be good. Thanks for sharing!
Kathryn- it says to mix the rice with "all other ingredients" which includes the butter. Hopefully your turns out, if not try it again with the butter mixed in. It's worth it!
Oh my gosh! This is total comfort food! LOVE it!!!
🙂 I gathered that I was supposed to add the butter to the other ingredients, but my question was how. Do I need to soften the butter or melt it first? It was fine without it, but I'd like to try it with it. I hope I wasn't asking a stupid question…just wondered if I needed to do something to the butter before adding it.
Lol Kathryn…Just a stick of softened butter or margarine and stir it in. I better go fix that, sorry!
Oh yummy yum! I have a question though. If you make the rice, and then cook it for 30 minutes in the oven, won't it turn out too mushy and a little weird?
Can you make this with any other kinds of rice? I am considering trying it with either wild rice or white rice because I don't have yellow rice right now but I am worried!
Mandy my casserole is already cooking. I can't wait for my family to walk in the door from work, sports activity bus and friends. My kitchen smells delicious. Thanks for sharing this recipe!
Can you believe that I was fortunate enough to have all the ingredients already on hand? This looks superb and I have just this minute taken it out of the oven. I'll report back if we didn't like it.
I also want to make it with white rice or wild rice.. not a fan of yellow
