I am sure you’ve seen Energy Bites floating around. I wanted to give them a try since I love everything in them. They are healthy and great to have in the fridge as a grab and go snack. Bonus: My kids love them. You know kids are the toughest critics so if they like them, they are a keeper.
Energy Bites

Ingredients
- 1 C. oats
- ⅓ C. toasted coconut flakes
- ½ C. peanut butter
- ½ C. ground flaxseed
- ½ C. mini semisweet chocolate chips
- ½ C. honey
- 1 Tbsp. Chia seeds
- 1 tsp. vanilla extract
Directions
- Mix all ingredients together with a mixer or wooden spoon.
- Let chill in the fridge for 30 minutes.
- Roll into whatever size balls you want.
- Store in an air-tight container in the fridge for up to 1 week.
