You won’t believe how easy these Zucchini and Corn Tostadas are to make. They are just the recipe to have on hand during the busy holiday season. They make for great appetizers or light meal.
I don’t know about you but when I find something I like to eat I eat it a lot. Take this Cedar’s Hommus. I love dipping pita chips into it and will eat it for days. There are so many different flavors to choose from. Zesty Lemon, Artichoke Spinach, Balsamic Caramelized Onion and Chipotle are just a few of the many flavors available. Cedar’s also makes dips, salsa, tzatziki and more.
For these Zucchini and Corn Tostadas I used the Garlic Hommus. It was a good choice. It went perfectly with the zucchini and corn. Cedar’s Hommus is gluten free and vegan. It has just the right amount of garlic in it so you aren’t overpowered by the flavor and needing a toothbrush immediately! It’s so creamy and smooth and made with fresh chickpeas. These tostadas took only about 15 minutes to make and the homemade tostada shells are way too easy to make.
