Triple Chocolate Chunk Cookie Bars

Hi friends, it’s Jess here from Sweet Menu. It’s not long now until Valentine’s Day and nothing says romance quite like chocolate! So why not spoil your loved one with a batch of these decadent Triple Chocolate Chunk Cookie Bars.

These chewy cookie bars are so easy to put together and are a delicious spin off of my Triple Chocolate Chunk Cookies. They have a soft brownie-like texture and are loaded with chunky pieces of white and dark chocolate – perfect for true chocolate fanatics. The best part is they really do come together in a flash with no need to chill the dough. If you want to take it one step further, you could even add a little chocolate frosting on top for the ultimate chocolate treat. A freshly baked batch of these delightful cookie bars is sure to be a winner.

Ingredients
  • ½ cup (1 stick) unsalted butter, room temperature
  • ½ cup brown sugar
  • ¼ cup caster sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup plain flour
  • ½ teaspoon baking soda
  • ½ teaspoon cornflour
  • ½ cup cocoa
  • 1 tablespoon milk
  • ½ cup dark chocolate chunks
  • ½ cup white chocolate chunks
Directions
  1. Grease a 9 inch square baking tin and line with baking paper so two sides overhang.
  2. Preheat the oven to 360 F (180 degrees).
  3. In a large mixing bowl, add the butter, brown sugar and caster sugar and beat with an electric mixer until combined.
  4. Add the vanilla and the egg and beat for a minute until combined.
  5. Sift in the flour, baking soda, cornflour and cocoa into the mixture and stir.
  6. Add the tablespoon of milk and then mix in both the dark chocolate and white chocolate chunks.
  7. Spoon the chocolate mixture into your prepared tray and smooth the top with a spatula.
  8. Bake in the oven for approximately 22 minutes or until firm on the edges but still soft and tender in the middle.
  9. Leave to cool for 10 minutes or so before transferring to a wire rack to cool completely.
  10. Divide into squares and enjoy with a cold glass of milk. I also recommend devouring one still warm from the oven!
