Cafe Rio Chicken
I recently ate at Costa Vida for the first time and fell in love with their Sweet Pork Salad. Then my sister-in-law told me about Cafe Rio and how good their food is. Grandpa Gallegos’ Chile
My grandpa made the best chile. It's not chili. It's chile. Because it's Mexican food, not American. Traditionally, Chile doesn't have beans in it, just meat. Marinated Roast
I don't know why this is called "Marinated Roast" because you don't marinate it. Maybe it marinates as it cooks in the slow cooker. Ok. Let's go with that. Whatever it is, it's delicious. The perfect roast, in my book. It is so tender and just falls apart if you cook it the way I do. Here's the trick: Put it all in the slow cooker when you go to bed and cook it on low. Shredded Beef Enchiladas
I love Mexican food. I am half hispanic on my dad's side and so I grew up with this food. My grandma always had her homemade tortillas fresh off the cast iron burner when we went to visit. One snack I loved to have was a roasted Anaheim Chile pepper folded inside a tortilla. I grow those peppers in my garden just for that snack.
