I was at my husband’s aunt’s house and she served this for breakfast. It is so moist and fluffy. I asked her for the recipe and she pulled out a Betty Crocker print out. I laughed and said that I will call this Aimee’s Coffee Cake, which is what my recipe card says. It is fast and I often make this on the weekends when we are all home together.
Cake
2 C. Bisquick or other biscuit or pancake mix
2/3 C. milk
2 Tbsp. sugar
1 egg
Mix all together and pour into a greased 9″ round pan.
Topping
1/3 C. Bisquick or other biscuit or pancake mix
1/3 C. brown sugar
1/2 tsp. cinnamon
2 Tbsp. cold margarine or butter
Mix all until crumbly and sprinkle over batter. Bake at 375 for 18-22 min.
I serve this with warm homemade maple syrup…mmm…
