These aren't really eclairs but yummy anyway.1 small box of graham crackers1 large box of vanilla instant pudding12 oz Cool Whip1 container of ready made chocolate frostingYou can make this 2 different ways: 1. Mix instant pudding as directed on box for a creamier, more pudding-like texture, or 2. just use box of pudding powder(not mixed with milk) for a thicker, more eclair type texture.Then: Layer bottom of pan with crackers. Cheesy Garlic Bread

1 loaf of french bread1/2 c. butter or margarine, softened2 cloves garlic, halved1 tsp. dried parsley1/3 c. grated parmesan cheesePreheat oven to 375. Cut slices down the length of bread loaf at 1 inch intervals, without cutting all the way through. Rub slices and top of loaf with cut sides of garlic halves. Mince garlic. Slow Cooker Chile Verde

This Slow Cooker Chile Verde is legit. Slow cooker recipes are the best. Just put it in and walk away. This is a favorite recipe of mine. Growing up, my dad would make ham hock and beans and homemade tortillas (like Grandma) all the time. I loved it and still do. My great-aunt Mary would make this chile verde with pork and I loved it.
