Now that school is back in session, I feel the need to make great snacks that my kids will love when they walk in the door. I love hearing about their day and what better way than over cookies and milk? These Oatmeal Apple Bites are healthy, too, so I don’t feel bad letting my kids have another one. They are so good with the bits of apples baked into them. My son especially can’t get enough of these.

Ingredients
- 2 egg whites
- ¼ cup milk
- 2 tablespoons oil (coconut or olive oil is what I use)
- 1 teaspoon vanilla extract
- 2 cups quick-cooking oats
- ½ cup all-purpose flour
- ¼ cup sugar
- ¼ cup packed brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon ground nutmeg
- 1 cup chopped peeled apple
Directions
- In a large bowl, beat the egg whites, milk, oil and vanilla.
- Combine the oats, flour, sugars, cinnamon, baking powder, salt and nutmeg; gradually add to egg white mixture and mix well.
- Stir in apple.
- Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray.
- Bake at 350° for 10-12 minutes or until bottoms are lightly browned.
- Remove to wire racks.
