Hi there friends! It’s Jess here from Sweetest Menu! I have another special treat from the Sweetest Menu kitchen to share with you. Today’s recipe is for Nutella Stuffed Caramelitas.
Just like regular Caramelitas, these golden buttery oat cookies are stuffed with a generous slathering of homemade salted caramel sauce. But there is also an extra twist- a ribbon of Nutella running right through the middle. Pour a little extra caramel sauce over the top and you have one chewy gooey cookie treat!
I am in love with these gorgeous Nutella Caramelitas. They are so easy to put together and they taste INCREDIBLE. The cookie dough is made with brown sugar and rolled oats which bake together into a crumbly and buttery cookie bar. The salted caramel sauce through the centre sweetens the mix and the secret ingredient of Nutella adds a deliciously chocolate hazelnut flavour. To finish it off, pour over a little extra salted caramel sauce and thendevour!
With so much sweet goodness running in the middle, the trick to keep the cookie bars together is to let them cool completely before removing them from the tin or cutting them into bars. I found leaving them overnight was perfection! The filling firmed up again and made it super simple to cut them into pieces. I shared these with my family and they loved them. They are a real treat for any one who loves an oaty cookie treat. I am a Nutella lover through and through and these are now one of my favourite Nutella treats!

Serves: 9-12
Ingredients
- 125 grams (1 and ¼ cup) rolled oats
- 200 grams (1 cup) brown sugar
- 210 grams (1 and ½ cup) plain flour
- 1 teaspoon baking soda
- 230 grams (1 cup / 2 sticks) unsalted butter
- 1 teaspoon vanilla extract
- 240 grams (1 cup) salted caramel sauce, homemade
- 150 grams (1/2 cup) Nutella
Directions
- Prepare a 9 inch square baking tin by greasing with butter and lining with baking or parchment paper. Preheat your oven to 180 C (360 F).
- In a large mixing bowl, place the rolled oats, sugar, flour and baking soda. Stir gently to mix. Melt your butter in the microwave until just melted and then pour over your oat mixture. Stir until all the ingredients are nice and moist and a soft dough forms. Press half of the dough into your prepared tin into an even layer.
- Pop into the oven for 14-15 minutes or until nice and golden on top. Leave to cool slightly for 5 minutes.
- Place dollops of your Nutella on top the browned oat layer. Smear slightly to cover most of the base. Pour over half of your caramel on top, reserving half for decorating. Gently tap the tin so the caramel completely covers the top. Grab the rest of your oat dough and place dollops all over the top. Most of the top should be covered but its ok to have some of the caramel poking through here and there. Bake for another 15 minutes or until the top is golden brown. Leave it in the tin to cool completely before popping into the fridge to set completely for at least 4-6 hours or even better, overnight.
- Run a small butter knife around the edges and lift your Caramelita bars out of the tin. Cut into small squares using a sharp knife. Drizzle over the left over caramel on top. Store the bars in the fridge.
