Hi there! Renee from Renee’s Kitchen Adventures back with another great dessert recipe to share this month…Key Lime Pie Bars!! My daughter recently relocated to South Florida. Her company flew me down to help her find housing a few weeks ago and I was reminded of how much I love all things key lime. South Florida is known for their great Key Lime Pie and I was able to indulge a bit when I was down there on this wonderful pie when my daughter and I split an authentic South Florida treat.
When I got back, I still had a hankering for a key lime dessert. I was thrilled when I found out my grocery store sells bottled key lime juice. Sure, you could juice all those tiny little limes or even substitute with regular limes, but the bottled key lime juice is wonderful and it’s super easy to use! When I found an easy recipe for a creamy lemon bar dessert, I knew I could transform it into a key lime dessert…and that is how these Key Lime Pie Bars were born!
I made a batch of these delicious bars for my son’s recent graduation party. They were a great choice for the dessert table, They are easy to eat and easy to take to take to any potluck as well. Everyone LOVED them! Of all the desserts on the dessert table, including the graduation cake, these bars were the first to disappear. It didn’t surprise me. They are so good! I had a several guests ask for the recipe.

Key Lime Pie Bars are an easy to make, easy to take summer dessert. Key lime juice gives the filling just the right amount of tart to balance out the sweet!

Ingredients
- Crust:
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 5 TBS unsalted butter, melted
- pinch of salt
- Filling:
- 1 - 14 oz. can sweetened condensed milk
- 4 large eggs
- ⅔ cup Key Lime juice (or lime juice)
- 1 teaspoon baking powder
- ¼ tsp. salt
- For Garnish: (optional)
- whipped topping
- green colored sugar OR grated lime peel.
Directions
- Preheat oven 350 degrees F. Combine the crust ingredients and press firmly into the bottom of a 13" x 9" baking dish that has been lightly coated with cooking spray.
- Bake crust for 8 minutes and allow to cool to room temperature.
- In large bowl, combine all filling ingredients with an electric mixer. Pour over cooled crust.
- Bake for 20 to 25 minutes or until filling is set but not browned. Allow to cool to room temperature and then refrigerate for at least 4 hours. Cut into squares and garnish with whipped topping and colored sugar or grated lime peel, if desired.
