Italian Sausage, Peppers and Noodles

Ingredients
  • 3 Tbsp extra virgin olive oil
  • 1 lb ground Johnsonville Italian sausage
  • 1 large onion, sliced thin
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 red bell pepper, cored and thinly sliced
  • 1 yellow bell pepper, cored and thinly sliced
  • 1 orange bell pepper, cored and thinly sliced
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 Tbsp dried basil
  • 8 ounces flat country style egg noodles, uncooked
  • Shredded Parmesan cheese for garnish
  • Chopped parsley for garnish
Directions
  1. Place a large, dutch oven or pot over medium-high heat; add olive oil.
  2. Once the oil is hot, crumble the spicy Italian sausage into the pan in small chunks. Let it brown on all sides. Remove it from the pot with a slotted spoon and place into a bowl; set aside.
  3. Add the sliced onion into the pan with the sausage drippings. Cook until translucent and lightly browned. Stir often to not burn.
  4. Add the salt and Italian seasoning and basil; stir to combine, then add in the sliced bell peppers. Saute with the onion for about 2 minutes until slightly tender.
  5. Add in the garlic, and cook for one minute. Add in the chicken broth and simmer to reduce for a few minutes, until almost completely absorbed.
  6. Add in the diced tomatoes with their juice, and return the browned spicy Italian sausage back into the pan, and gently fold the mixture to combine; simmer for 3-4 minutes to combine the flavors. Turn the heat to low.
  7. Meanwhile, prepare noodles according to package directions. Drain and add them into the sausage mixture, using tongs to gently toss and combine all.
  8. Serve up in bowls and top with parsley and Parmesan cheese.
