Dark Chocolate Ganache Truffles

Ingredients
  • 1 cup good quality dark chocolate
  • ½ cup heavy or thickened cream
  • ⅓ cup cocoa powder
Directions
  1. Finely chop the dark chocolate and place in a heatproof bowl. In a small saucepan, add the cream and place on a medium heat until the cream is simmering but just before it starts to boil. Immediately pour the warm cream over the chocolate, cover the bowl with a plate and leave it to sit for 3-5 minutes.
  2. Then, whisk the chocolate cream mixture until smooth and creamy. Transfer the chocolate ganache into a small but deep container, cover with plastic wrap and place in the freezer for at least two hours. Sift the cocoa powder into a separate bowl.
  3. Once the ganache has become firm, remove from the freezer and use a cookie scoop or a teaspoon to spoon out the truffles and roll them smooth in your hands. Drop them into the cocoa powder and roll around until completely coated before removing and setting on a plate. Continue until all truffles are done. Store in the fridge.
