Hey friends, it’s Kelly back again from Life Made Sweeter. I know everyone is busy gearing up for the big holiday dinner tomorrow so I’m here to give you an easy and delicious last minute dessert idea!
Pecan pie is a favorite around this time of year but if you’re short on time, how about making it into a cookie pie? It still satisfies that pecan pie craving but without the hassle of making or rolling out the pie dough. Plus, this is one dessert both kids and adults will be fighting over for a second piece!
Just layer your favorite cookie dough (homemade or store-bought) out onto a cast iron skillet or a round baking pan, top with chocolate chips and the pecan caramel filling and bake away! Serve with a big scoop of vanilla ice cream and you’ve got a dessert that everyone will be talking about all year long!

- Your favorite cookie dough or use the recipe below
- ½ cup semi-sweet chocolate chips,
- 1 – ¼ cups of pecan halves
- ⅓ cup unsalted butter, melted
- ½ cup corn syrup
- ⅓ cup granulated sugar
- 1 egg
- ¼ teaspoon salt
- 1 teaspoon cornstarch
- Oatmeal Peanut Butter Skillet Cookie
- 1 ¼ cups all purpose flour
- 1 tsp baking soda
- ¼ teaspoon salt
- ½ cup butter , softened to room temperature
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup peanut butter
- 1 large egg, room temperature
- 1 tsp vanilla extract
- ½ cup semi-sweet chocolate chips
- ¼ cup peanut butter chips
- Oatmeal Peanut Butter Skillet Cookie
- 1 ¼ cups all purpose flour
- ¾ cups old fashioned oats
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter , softened to room temperature
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup peanut butter
- 1 large egg, room temperature
- 1 tsp vanilla extract
- ½ cup semi-sweet chocolate chips
- ¼ cup peanut butter chips
- Preheat oven to 350ºF and grease the bottom and sides of a 9-inch cast-iron skillet or 9” round baking pan with cooking spray or butter.
- Whisk together melted butter, corn syrup, sugar, egg, salt, and cornstarch in a large bowl. Set aside.
- In a large bowl, whisk together the flour, baking soda, and salt. Stir in the oats. Set aside.
- Using your stand mixer or handheld mixer, cream butter, granulated sugar, brown sugar and peanut butter beating on medium for 2 minutes. Add egg and vanilla and mix until well incorporated.
- Turn mixer to low speed, add the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate and peanut butter chips.
- Press the cookie dough into the prepared skillet. Sprinkle the center with chocolate chips, then top with a single layer of pecans and pour the caramel filling over the top.
- Bake for 25 to 30 minutes, until the edges are crisp and the cookie is golden and cooked through. Remove from oven. Serve warm and with a scoop of vanilla ice cream if desired.

Happy Thanksgiving ! I saw this recipe and said “YUM”, but what’s Not to YUM about, when you have cookies ,chocolate, pecans and oatmeal ! But where is the oatmeal? I can’t find the oatmeal or do I need to get New glasses? Thanks for the recipe . Looks Delicious !!!!!
