Fried Rice

Fried Rice

Fried Rice is the perfect side to any Asian dish. It's so easy to make and tastes just like it came from a restaurant. Last week, I shared a fantastic recipe for Sweet and Sour Chicken. This rice goes perfectly with it. Like the chicken, this rice tastes just like it came from a Chinese restaurant. The secret is the sesame oil. I love that I can make this at home. It's so simple, but this is the first homemade fried rice I've tasted that tastes like it came from … [Read more...]

Orange Chicken For Dummies

Orange Chicken For Dummies

This Orange Chicken is one of the most popular recipes on my blog, and for good reason! A slow cooker meal that is completely delicious is bound to be awesome. Lance works in Wyoming during the cold season. He's home maybe 2 or 3 days and then he's gone about 2 weeks. Or longer. Which stinks. His family is nearby, which helps. Lance's brother and his wife live right behind us and always help out when needed. Like when my bath tub drain lever breaks off. Or my … [Read more...]

Summer Risoto

I am hurrying to squeeze this recipe in before it's fall! It'll be here before we know it. Already it is cooling off at nights, even cold! This recipe uses those garden zucchini and peas we all love. Creamy risotto matches well with the zucchini and peas. It makes a great side dish or a light dinner or lunch meal. 2 cans (14.5 each) chicken broth2 1/2 c. water3 Tbsp. butter1 or 2 large zucchini (1 lb), cut into 1/2 inch cubescoarse salt and black pepper1/2 c. finely chopped onion1 1/2 c. … [Read more...]

Spanish Rice

Spanish Rice

If you're looking for an easy recipe for Spanish Rice, this is it. It has the authentic taste you will find at Mexican restaurants.  I needed a recipe for Spanish Rice for my Mexican dishes. I found it on Simply Recipes, where I also found a recipe for the refried beans that I'll be using in my burrito. I haven't found a packaged version of Spanish Rice that I like on the grocery store shelves. I was looking for that homemade flavor that you get when you go to a Mexican Restaurant. This … [Read more...]

Baked Risotto with Asparagus & Spinach

I've never eaten risotto. I've never made risotto. Until I saw this dish. I knew I needed to try it. I like asparagus and I like spinach. Together in this risotto, it's pretty tasty. Get Yo’ Man Chicken!

Get Yo’ Man Chicken!

I saw this on an episode of Down Home With the Neeley's and knew I had to make it. It is called "Get Yo' Man Chicken" because when you make this for a man, he will be yours. It is really good. I love it over the rice. It just tastes awesome. You can use white or brown rice or a combo of both, like I do. I can't totally handle the texture of straight brown rice yet, but I'm working on it. Thankfully my husband and kids like the combo, too. It makes for easier cooking.Get Yo' Man Chicken2 … [Read more...]

Cheesy BBQ Chicken and Rice

These come from Kraft Foods. I liked them but I think next time will use pinto beans instead of the black beans. It's just my preference, but you can make them just the way I did.
