South of the Border Burritos are such an easy dinner recipe. Filled with delicious ingredients, you won't regret serving them up! Hola! I recently ate at Costa Vida for the first time and fell in love with their Sweet Pork Salad. Then my sister-in-law told me about Cafe Rio and how good their food is. My grandpa made the best chile. It's not chili. It's chile. Because it's Mexican food, not American. Traditionally, Chile doesn't have beans in it, just meat. Who doesn't love Enchirritos? Crazy-food-blogging-girl-say-what?!? Well it's a cross between an enchilada and burrito. And so totally excellent. The second day leftovers are even better. Shredded Beef Enchiladas

I love Mexican food. I am half hispanic on my dad's side and so I grew up with this food. My grandma always had her homemade tortillas fresh off the cast iron burner when we went to visit. One snack I loved to have was a roasted Anaheim Chile pepper folded inside a tortilla. I  grow those peppers in my garden just for that snack. Who doesn't love tacos? Well these are the same only...different. Just cook up some tater tots and top with taco meat and such.  Homemade Flour Tortillas are so easy to make that you need to add them to your Mexican meals. Slather them with butter and be amazed. I come from a Hispanic background.
