Beef Enchilada Bake

This Beef Enchilada Bake will be a hit with your family. Everything you love about Enchiladas in casserole form layered with tortilla chips.   One of the very first recipes I ever had of my mother in law's was Enchilada Casserole.  It was really good and hit the spot for that Mexican food craving.  The only thing I didn't like about it was the corn tortillas.  I'm just not a fan.  I am, however, a super fan of tortilla chips so I altered her recipes about a year ago and only wished I had done … [Read more...]

White Chicken Chili {in broth}

White Chicken Chili {in broth}

I have seen recipes for White Chicken Chili floating around and I have a confession. I have never eaten White Chicken Chili. I have wanted to, but just never got around to making it. I told myself this year I would do it. And I did. Only it's not the regular creamy version. It's a broth version and I loved it. It reminded me of Taco Soup. I loved it topped with plain greek yogurt and shredded cheddar cheese. Then I crunched up some tortilla chips and stuck those in. I love that my family loved … [Read more...]

Jalepeno Popper Pull-Aparts

September 7, 2013 by mandyrecipebox

Jalepeno Popper Pull-Aparts

Jalepeno Popper Pull-Aparts are little bites of spicy goodness. Filled with cream cheese and jalepenos, these won't disappoint!  I never used to like Jalapenos until I met my husband. He loves spicy food. The spicier the better. Even though I have a Hispanic background, I am a wimp when it comes to spicy food. I love Mexican food, but in a mild form. Now I love jalapenos. And I really love Jalapeno Poppers. So this Pull-Apart version is perfect. The bread helps tame the spicy jalapenos. My … [Read more...]

Mexican Egg Rolls

Mexican Egg Rolls

 Mexican Egg Rolls are a fun spin on the classic version. Make a lot because they won't last long!   I made Philly Cheese Steak Egg Rolls and they were a hit. So I knew I wanted to try these Mexican Egg Rolls the second I saw the recipe. I may have had 3. They are not spicy at all, but you could add a kick by using jalepenos if you want. Try garnishing them with avocados and sour cream for a fresh taste. Mexican Egg Rolls   Print Author: Mandy Bird Ingredients 1 Tbsp. … [Read more...]
