Lasagna is one of my favorite comfort foods. When I make it, I use cottage cheese instead of Ricotta. It's just the way I've always eaten it. Once, I tried making it with Ricotta cheese and my husband didn't love it as much as he did with the cottage cheese. So I went back to using cottage cheese. This Red and White Pasta is my new go-to recipe when I want something quick. Normally, spaghetti falls into that category. But even that is a struggle for my Preston who doesn't like many tomato-based meals such as lasagna and spaghetti.
