Natchitoches Meat Pies

September 27, 2010 by mandyrecipebox

Natchitoches Meat Pies

Natchitoches Meat Pies are at the top of my list of dinner foods. My kids ask for them, that's why. When that happens, whatever it is goes on the permanent menu. The pie crust is so flaky and just makes it taste so good. They aren't hard to make, so give them a try. Thanks to Our Best Bites for sharing these. They are a winner. I changed it a little to fit my family's taste. Natchitoches Meat Pies   Print Prep time 30 mins Cook time 30 mins Total time 1 hour   … [Read more...]

Enchirritos

Enchirritos

Who doesn't love Enchirritos? Crazy-food-blogging-girl-say-what?!? Well it's a cross between an enchilada and burrito. And so totally excellent. The second day leftovers are even better. I found them in a magazine and tried them out on my guinea pigs family. They liked them and so I was happy, because who likes to make something that only they like. Unless its a really great dessert, then I kinda like when no one else likes it. More for me *insert evil laughter*. Enchirritos   … [Read more...]

Shredded Beef Enchiladas

Shredded Beef Enchiladas

I love Mexican food. I am half hispanic on my dad's side and so I grew up with this food. My grandma always had her homemade tortillas fresh off the cast iron burner when we went to visit. One snack I loved to have was a roasted Anaheim Chile pepper folded inside a tortilla. I  grow those peppers in my garden just for that snack. These enchiladas are made with corn tortillas and shredded beef. I just cook the roast in my slow cooker and the rest is fast and simple. And cheesy. Also, if … [Read more...]

Beefy Ravioli

September 19, 2009 by mandyrecipebox

Beefy Ravioli

Beefy Ravioli is way too easy. It is basically just like making spaghetti. It's a nice change from an old classic. We love spaghetti around here. I love it on busy nights. I love pasta period. Beefy Ravioli takes no time at all to make and tastes soooo good. I decided to switch it up by using refrigerated cheese ravioli in place of spaghetti noodles. The result was delish! It didn't even take any more time than making spaghetti. You could throw in some sliced olives for a great … [Read more...]

Zucchini Casserole Recipe

Zucchini Casserole Recipe

This has got to be one of my favorite ways to eat zucchini. My mother-in-law first made this Zucchini Casserole Recipe and I had never had it and now I make it every summer when there is an abundance of zucchini. It is just so good. Sometimes people ask why I put crushed saltine crackers on this casserole. My answer? Why not? It just gives it something extra and I love it. Plus, that's the way my mother-in-law makes it and why mess with perfection? I look forward to this Zucchini Casserole … [Read more...]

Sloppy Joes

Sloppy Joes

This is out of one of our community cookbooks and once you try it, you'll never use Manwich again! That's all I used to use until I tasted this. I like mine with a slice of american cheese on top but you'll love this, I promise! You can freeze the leftovers (I just stick mine in ziploc bags) and then just heat them up on the stove in a saucepan or in the microwave with a microwave safe dish.3 lbs ground beef3 cans tomato soup1 onion, choppedgreen pepper (optional)garlic salt to taste1/4 c brown … [Read more...]
