Natchitoches Meat Pies are at the top of my list of dinner foods. My kids ask for them, that's why. When that happens, whatever it is goes on the permanent menu. Who doesn't love Enchirritos? Crazy-food-blogging-girl-say-what?!? Well it's a cross between an enchilada and burrito. And so totally excellent. The second day leftovers are even better. Shredded Beef Enchiladas
I love Mexican food. I am half hispanic on my dad's side and so I grew up with this food. My grandma always had her homemade tortillas fresh off the cast iron burner when we went to visit. One snack I loved to have was a roasted Anaheim Chile pepper folded inside a tortilla. I grow those peppers in my garden just for that snack. Beefy Ravioli
Beefy Ravioli is way too easy. It is basically just like making spaghetti. It's a nice change from an old classic. We love spaghetti around here. I love it on busy nights. I love pasta period. This is out of one of our community cookbooks and once you try it, you'll never use Manwich again! That's all I used to use until I tasted this. I like mine with a slice of american cheese on top but you'll love this, I promise!
