Greek Salad

January 15, 2014 by mandyrecipebox

Greek Salad

Greek Salad is a refreshing salad with chicken and a wonderful dressing all tossed with fresh vegetables. It makes a wonderful light meal. Are you all on the eating healthy train? I am partially. It's good to eat healthy, but it's good to have treats. It just is. Moderation is the key. We've all heard that. Salads are good as long as you eat them right. I can't handle a salad with just lemon juice on it (it's a thing) or just a splash of vinegar. You gotta have a good dressing. With yummy … [Read more...]

White Chicken Chili {in broth}

White Chicken Chili {in broth}

I have seen recipes for White Chicken Chili floating around and I have a confession. I have never eaten White Chicken Chili. I have wanted to, but just never got around to making it. I told myself this year I would do it. And I did. Only it's not the regular creamy version. It's a broth version and I loved it. It reminded me of Taco Soup. I loved it topped with plain greek yogurt and shredded cheddar cheese. Then I crunched up some tortilla chips and stuck those in. I love that my family loved … [Read more...]

Grandpa Gallegos’ Chile

March 26, 2011 by mandyrecipebox

Grandpa Gallegos’ Chile

My grandpa made the best chile. It's not chili. It's chile. Because it's Mexican food, not American. Traditionally, Chile doesn't have beans in it, just meat. But anyone in any culture tends to add lib when it comes to cooking and does what they want. We make tortillas and ham hocks and beans and eat them with this Chile. It can be frozen and that's what I love about this. A funny thing about my grandpa-he said that he'd live to 90 because that's a good age. He passed away just a few days after … [Read more...]

Cheesy BBQ Chicken and Rice

Cheesy BBQ Chicken and Rice

These come from Kraft Foods. I liked them but I think next time will use pinto beans instead of the black beans. It's just my preference, but you can make them just the way I did. I bet you're thinking, "BBQ Rice?" It's really pretty good. Give it a try...BBQ Chicken and Rice1 lb. boneless skinless chicken breast, cut into strips 2 cups instant white rice, uncooked 1 cups Barbecue Sauce 1-1/2 cups water 1 cup canned black beans or pinto beans, drained 1-1/2 … [Read more...]

Old Fashioned Baked Beans

Old Fashioned Baked Beans

This came from a Taste of Home magazine and it is my favorite baked beans recipe! It's in a slow cooker so it is way easy. Whenever I make these, there's never any left. I love that it uses canned Pork and Beans. All  you do is dump it all in the slow cooker and you are free to kick your feet up with a good book and Diet Coke (or other beverage of your choice, but what else is there. Really).1 pound bacon, cooked, and cut into small pieces1/2 c. chopped onion3 (15 oz) cans of pork and … [Read more...]

Slow Cooker Chile Verde

Slow Cooker Chile Verde

This Slow Cooker Chile Verde is legit. Slow cooker recipes are the best. Just put it in and walk away. This is a favorite recipe of mine. Growing up, my dad would make ham hock and beans and homemade tortillas (like Grandma) all the time. I loved it and still do. My great-aunt Mary would make this chile verde with pork and I loved it. Finally, I have the recipe to make my own. I've tweaked it a little to suit my taste and love making it anytime I want. Slow Cooker Chile Verde   … [Read more...]
