Chicken and Dumplings

September 4, 2015 by mandyrecipebox

Chicken and Dumplings

As a kid I didn't really appreciate classic comfort foods.  My comfort foods were candy, cold cereal and pizza.  It wasn't until I was older that I truly knew and enjoyed true comfort food! Like this Chicken and Dumplings.   Hey, it's Amy from My Name is Snickerdoodle! Comfort foods like Sunday Roast, Chicken Broccoli Bake, and Chicken Fried Chicken totally come to mind now.  Granted, I don't eat comfort foods as often as I would like or else I would have to have 4 hours naps every day!  … [Read more...]

Homemade Limeade

Homemade Limeade

Homemade Limeade tastes amazing and tastes so refreshing. Citrus drinks are my favorite!  Especially the ones you make at home.  Like Fresh Lemonade and Strawberry Basil Lemonade.  They are actually really easy to make and truly do taste so much better than any powder or drink you can get pre-made from the store. Limeade has become a new favorite of mine lately.  If you've never tried it, then it's a must!  It's a little more tart than lemonade, but seems a little bit more tropical all at the … [Read more...]

Peanut Butter Cup Cookies

Peanut Butter Cup Cookies will make peanut butter lovers so happy! With Peanut Butter Cups inside every cookie, the world is a yummier place. My family loves peanut butter!  Our favorite way to eat it is on a spoon.  My kids can hear the jar being opened and come flocking to kitchen begging for a taste!  I think the only way to make peanut butter better is by adding chocolate.  And maybe more peanut butter! … [Read more...]

Mini Ham and Vegetable Quiche

May 1, 2015 by mandyrecipebox

Mini Ham and Vegetable Quiche

These Mini Ham and Vegetable Quiche are totally versatile and make the perfect brunch recipe. Amy from My Name is Snickerdoodle here. I have a simple theory about food.  99% of the time it tastes better in mini form.  Maybe it's because it so adorable that you can't help but want to eat it OR you feel like you can get away with eating more because it's smaller. Either way, these mini (and crust-less) quiche are super easy to make and extremely scrumptious.  They are perfect for a breakfast … [Read more...]

I'll be the first to admit that some of my top comfort foods are potatoes and anything fried.  The healthiest?  Absolutely not but, every now and then it is okay to indulge! Fuji Chicken

Fuji Chicken

Hey, it's Amy from My Name Is Snickerdoodle again!  One of my favorite things to do in life is trying to recreate restaurant dishes at home.  It's something that can be fun and challenging all at the same time.  There have been times where I just can't ever get it right.  Then there are times that I can get it 99% spot on (like with these Chicken Nuggets!)  This Fuji Chicken is pretty close to a dish I used to order at a sushi joint when we lived in Utah years ago. Since moving to Texas it's … [Read more...]

BLT Salad with Avocado

BLT Salad with Avocado

This time of year though, we are all trying to be a little more aware of what we are eating.  Why not turn such a classic and yummy sandwich into a refreshing salad?  This BLT Salad with Avocado is so delicious that you won't even miss the bread.  However, if you need that little extra toasted crunch, toss in a few croutons.   I'm one of those people who cannot resist a good BLT sandwich!  Have you ever had a BLT made with a little (or alot) of guacamole smeared on top?  Oh boy! You … [Read more...]

Coconut Cashew Toffee

December 5, 2014 by mandyrecipebox

Coconut Cashew Toffee

I used to be afraid of making toffee because I always thought it was hard to do.  Nothing with only 5 ingredients is hard to make!  If you are capable of stirring for a few minutes straight and can boil water, you can make this Coconut Cashew Toffee. This time of year I try to make a few batches to share with friends and family.  I've completely won everyone over in my husband's office with this exact toffee recipe.  A few have even requested it during the year and not just at Christmas … [Read more...]

Beef Enchilada Bake

November 7, 2014 by mandyrecipebox

Beef Enchilada Bake

This Beef Enchilada Bake will be a hit with your family. Everything you love about Enchiladas in casserole form layered with tortilla chips.   One of the very first recipes I ever had of my mother in law's was Enchilada Casserole.  It was really good and hit the spot for that Mexican food craving.  The only thing I didn't like about it was the corn tortillas.  I'm just not a fan.  I am, however, a super fan of tortilla chips so I altered her recipes about a year ago and only wished I had done … [Read more...]
