Grandma Cuckoo’s Pineapple Cookies

October 2, 2009 by mandyrecipebox

Grandma Cuckoo’s Pineapple Cookies

These are one of my favorite  cookies from my childhood. They are my Grandma Cuckoo's recipe, but my mom always made them for us growing up. We called my grandma that, by the way, because she has a cuckoo clock. We were little kids, you know the nicknames you give people, right? Anyway, I haven't had these cookies since I was younger. Then they popped into my head so I called my mom for the recipe and made them. Oh, I was taken back in time when I bit into the first one.Heavenly is all I … [Read more...]

Glazed Sneaky Meatloaf

I love meatloaf. Especially meatloaf sandwiches. Sometimes I'll make meatloaf just for the leftovers so I can make a sandwich out of them. I found this recipe that lets you be sneaky and healthy without your family knowing it. Green Tomato Salsa

Stop! Do not let all your green tomatoes go to waste in the frost!   Pick them and make salsa! It is so good, and I may even like it better than regular salsa. It can be bottled or frozen. So get out there and gather up your green tomatoes to make... Green Tomato Salsa (makes just over 1 quart) 4 good sized tomatoes 1 jalepeno pepper with however many seeds you want (the more seeds, the hotter the salsa) 1/4-1/2 onion 1 Tbsp. lemon juice 1 Tbsp. vinegar 1-2 tsp. … [Read more...]

Beefy Ravioli

Beefy Ravioli

Beefy Ravioli is way too easy. It is basically just like making spaghetti. It's a nice change from an old classic. We love spaghetti around here. I love it on busy nights. I love pasta period. Beefy Ravioli takes no time at all to make and tastes soooo good. I decided to switch it up by using refrigerated cheese ravioli in place of spaghetti noodles. The result was delish! It didn't even take any more time than making spaghetti. You could throw in some sliced olives for a great … [Read more...]

Fresh Salsa

Fresh Salsa

I love homemade fresh salsa. So I decided to make some this year and freeze it. I made this recipe up after looking online at some other recipes to get the general idea. The beauty of it is that you can add or subtract your own ingredients or amounts. Don't like cilantro? Don't put it in. Like garlic? Add it. Super easy and fast. I made 8 quarts by hand in just over an hour. I made it one time with garlic and one time without. I like it better without. DO NOT be tempted to add more onion or … [Read more...]

Quick Coffee Cake

I was at my husband's aunt's house and she served this for breakfast. It is so moist and fluffy. I asked her for the recipe and she pulled out a Betty Crocker print out. I laughed and said that I will call this Aimee's Coffee Cake, which is what my recipe card says. It is fast and I often make this on the weekends when we are all home together.Cake2 C. Mandarin Orange Jello Salad (or is it pudding?)

Another yummy recipe from my mother-in-law! This is made with orange jello and vanilla pudding, so you get both tastes. Your mouth will wonder if this is jello or pudding? Either way, it's addicting and delicious! You can also use a different flavor of jello. I've made it with strawberry-banana jello and it is good!1 large package orange Jell-o 3 C. water1 large package Cook and Serve Vanilla pudding mix2 small cans or 1 large can mandarin oranges, drained1 pint whipping cream, whipped or 1 … [Read more...]

Zucchini and Chicken Stir Fry

Another zucchini recipe? Yes, I know but tis the season, right? A girl made this at our church party and it was excellent. Zucchini Casserole Recipe

Zucchini Casserole Recipe

This has got to be one of my favorite ways to eat zucchini. My mother-in-law first made this Zucchini Casserole Recipe and I had never had it and now I make it every summer when there is an abundance of zucchini. It is just so good. Sometimes people ask why I put crushed saltine crackers on this casserole. My answer? Why not? It just gives it something extra and I love it. Plus, that's the way my mother-in-law makes it and why mess with perfection? I look forward to this Zucchini Casserole … [Read more...]
