Amish Chicken Casserole

Amish Chicken Casserole is a family pleasing dish. It’s one easy dinner recipe you will want to keep on hand.

Amish Chicken Casserole

Comfort foods are in full force in our house. Bring them on! I love all the hearty casseroles and soups this time of year brings. Casseroles are one of my favorite things to make because you just dump everything in a dish and bake it till bubbly. Easy peasy and so good. One of our favorite casseroles is this Pizza Noodle Dish or Shepherd’s Pie.

Amish Chicken Casserole

Let me tell you a little something about the crazy deliciousness of this casserole. My kids aren’t huge leftovers fans. But. BUT. They ate this casserole up when I made it and then ASKED for the leftovers for lunch the next day. It’s magic, this casserole, let me tell you. Make it and see why. Watch your family praise you and make you feel like the magician you are.

Serves: 6
Ingredients
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 tsp. dried thyme or 1 Tbsp. fresh thyme, finely chopped
  • 1 tsp. kosher salt
  • 1 tsp. ground black pepper
  • 1 cup milk
  • ½ cup shredded Parmesan Cheese
  • 8 oz rotini pasta noodles, cooked al dente
  • 2 cups diced cooked chicken or you can use a rotisserie chicken
Directions
  1. Preheat oven to 350 degrees F.
  2. Spray a 2 quart casserole dish with non-stick cooking spray.
  3. Melt the butter in large saucepan. Add flour and whisk together for 1 minute.
  4. Add broth, whisking and allow to come to a boil. Add thyme, salt and pepper as you whisk.
  5. Bring mixture to a boil and continue to whisk occasionally. Lower the heat and add milk and cheese.
  6. Cook for 3-5 minutes until sauce is thickened and milk is warmed through.
  7. Pour sauce over cooked pasta and add diced chicken to the mixture. Stir and pour into the casserole pan.
  8. Cover and bake for 20-25 minutes.

    Oh my goodness, this is a fantastic recipe. My husband claimed I messed it up as soon as he finished his first bite. “I think you meant to double this!” This is a great dish for when you need some simple comfort food. I’ll be making this again and sharing with others.

    My family really enjoyed this! I had to cook my casserole an additional 15 minutes in order for the sauce to thicken enough, but otherwise I followed the recipe exactly.
