Don’t get me wrong, I think it’s so cute and fun that there are moms like that. I’m just not one of them. My biggest stretch is making green eggs and ham or something simple like that. Simple and easy is how I roll. But. Don’t mistake simple and easy for boring or tasteless.
I picked up a bag of Cooked Perfect Fire Grilled Bourbon BBQ Chicken Chunks to make this simple and easy meal, which was anything but boring or tasteless. It’s the complete opposite! You guys. The flavor in this chicken is legit.
To go along with the simple and easy theme of St. Patrick’s Day I served up some Easy Roasted Broccoli. It is green and delicious and a fun pop of color. With some Parmesan cheese on top it’s a great side. I used frozen broccoli and let it thaw before tossing it with olive oil and salt. Roast it right along side the Cooked Perfect Bourbon BBQ Chicken for a one and done meal. This took about 5 minutes to prep and just 16 minutes in the oven. Boom. Dinner is done!

- 1 Bag Cooked Perfect Fire Grilled Chicken, Bourbon BBQ Chunks
- 16 oz bag frozen broccoli, thawed
- 2 Tbsp. olive oil
- 1 tsp. salt
- ¼ cup shredded Parmesan Cheese
- Preheat oven to 400 degrees F. Line a baking pan with foil.
- Place broccoli on the pan and drizzle with oil and sprinkle with salt. Stir to combine.
- Heat Fire Grilled Chicken per package instructions: heating in the oven for 15-18 minutes. Place broccoli in oven for 13 minutes. Remove and add cheese. Place in oven for an additional minute or two.
- Remove from oven and enjoy.
