These Peanut Butter and Jelly Bars are great for a grab and go breakfast or as a dessert. Either way, they are delicious! They layers all go together perfectly.

Look at those bars! Just ready to grab and munch. The oatmeal topping is so good. So is the peanut butter filling. And everything else. Just make these and you will understand.

Serves: 16
Ingredients
  • 1½ cups quick oats, unccoked
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ¼ tsp. baking soda
  • ¼ tsp plus ⅛ tsp salt, divided
  • ¼ tsp. cinnamon
  • 6 Tbsp. butter, melted
  • 8 oz. cream cheese, softened
  • ½ cup creamy peanut butter
  • 1 egg
  • ½ cup favorite flavor jam
Directions
  1. In a bowl, mix together the oats, flour, brown sugar, baking soda, ¼ tsp. salt and cinnamon. Add melted butter and mix until crumbs form. Set aside ½ cup oat mixture for topping.
  2. Firmly spread remaining mixture in a lightly greased 8x8 pan.
  3. Bake at 350 degrees for 15 minutes.
  4. Meanwhile, beat together cream cheese, peanut butter, egg and remaining salt.
  5. Spread over baked crust; spread with jam.
  6. Top with reserved oat mixture.
  7. Bake another 30 minutes; cool.
  8. Refrigerate one hour until fully set. Cut into squares.

    My stepdaughter loves PB&J! For my bridal shower a couple years ago everyone brought a recipe to share with me; her recipe was for making a PB&J sandwich! We’ll have to make a ‘fancier’ version by trying these! Thanks for sharing!!
