Slow Cooker Chicken Enchilada Soup

It’s missing a handle but still works perfectly so I have never replaced it. I have also talked about a friend who didn’t own a slow cooker and she has 10 children. I know. Crazy. I was browsing through Yahoo Food! and came across a recipe for Slow Cooker Chicken Enchilada Soup. You really need to check out their website. This slow cooker Enchilada Soup is just the thing for chilly fall and winter nights. Less than 10 minutes of prep time! Just throw everything into your Crock Pot and let the magic happen.

Serves: 6
Ingredients
  • ½ cup chopped onion
  • 3 garlic cloves, minced
  • 2 cans (14 oz. each) chicken broth
  • 1 (8 oz.) can tomato sauce
  • 1 (15 oz.) can black or pinto beans, rinsed and drained
  • 1 (14.5 oz.) can diced tomatoes
  • 1 (15 oz.) can corn kernels
  • 1 tsp. ground cumin, plus more to taste
  • ½ tsp. dried oregano
  • 1 lb. boneless, skinless chicken breasts
  • Toppings
  • shredded cheddar cheese
  • chopped green onions
  • chopped fresh cilantro
  • avocado, sliced
  • sour cream
  • crushed tortilla chips
Directions
  1. Place everything but the toppings into a slow cooker.
  2. Cover and cook on low for 4 to 6 hours.
  3. Remove the chicken, cut or shred it with two forks, and place it back in the slow cooker.
  4. Ladle into servings bowls and top each with toppings.
Notes
You can freeze this soup! Just cook it and place into freezer safe containers. Let cool for 30 minutes and freeze. To re-heat, just place it back into a slow cooker on low until heated through or microwave it. Top with toppings as usual.

    My mom always used a pressure cooker but she kind of made me afraid of one because of all her safety tips.
    I would like to try again because her stuffed peppers were great.

    I have been wanting a pressure cooker for awhile, just not in the budget there are so many great recipes for them, its hard to pick. Love the recipe as I have chicken and salsa in the crock as we speak, it may just get changed to this soup!

    I would use the pressure cooker feature. I have just started this last year getting into it, and used my moms, but it would be so great to have one of my own!! Salsa next year?! Yum!!

    This recipe looks great! I actually tried something like this a while back, and this just brought back so many nostalgic memories, haha! I love cooking stuff like this. I always try to find new recipes on forums and I got great ones emailed to me from http://lovelyrecipesforyou.weebly.com and I genuinely enjoy them.     I don’t think I could live without our slow cooker too – it’s such a life saver especially with kids. We are big fans of chicken enchiladas and in soup form sounds even better! This looks so comforting and delicious!

    I still enjoy cooking some things I have never tried before. I have used a pressure cooker. But it’s been years . I remember my mama and sisters using one. And I know it’s a must for canning meats and vegetables.Looks like a good one.

    I think that I would start off with pressure cook a roast, and I would cook something with each option that the instant pot has. Such a great versatile cooking tool. I would love to play with it
