If you’ve never made cookies from a cake mix, you gotta fix that! These Strawberry Chip Cookies are the perfect cake mix cookie recipe to start with. Perfectly chewy and soft.

My oldest daughter loves making these cookies. They are super simple to make and she loves the flavor. A note about this cake mix cookie recipe: the dough will be oily. It’s just the way it is. But the final product will be amazing. No oily-ness at all. Just a perfectly chewy and soft cookie.

Ingredients
  • 1 box Strawberry Cake mix
  • 1 tsp. baking powder
  • 2 eggs
  • ⅔ cups vegetable oil
  • 1 tsp. vanilla
  • 1½ cups white chocolate chips
Directions
  1. Heat oven to 350 degrees F.
  2. Mix together the dry cake mix and baking powder.
  3. Add the eggs, oil and vanilla; mix.
  4. Add the white chocolate chips and mix again.
  5. Drop onto baking sheets lined with parchment paper or silicone mats.
  6. Bake 10-11 minutes. Make sure not to let them brown.
  7. Store in an airtight container.
Notes
When placing them on the baking sheets, make sure you build them up and not leave as drops. This will help with the spreading as they like to do. So I just squish and form them taller.

    • I just form them with my hands to go tall instead of leaving them as drops of dough. It helps with the spreading.

  3. I grew up with cake mix cookies, but they were always just plain and simple. I love this version – so pretty, and still simple – but definitely not plain. I’ll have to have my daughter make a batch, she’d love them!
