Pineapple Upside Down Cake …For Two

This Pineapple Upside Down Cake is scaled down to make two perfect sized little cakes. It’s the perfect treat for a special dinner for two or just because you won’t eat the whole cake before it goes bad.

If I make a dessert, there’s a huge chance that I will end up eating most of it. I am THE dessert lover in our house. My kids love it, my husband likes it, but I LOVE it. So this cake is perfect because it just makes 2 little cakes and then I don’t have to worry about eating an enitre cake over the next few days. I can’t waste it, duh. 
The flavor is amazing. Seriously. There’s a little nutmeg that makes the flavor incredible. You can make this as a special dessert for a special night, or maybe there’s just the two of you at home, or you live alone. You can easily double or triple this to make more little cakes. You just need the ramekins to bake them in. How fun are personal sized desserts?

Ingredients
 
4 tsp. butter, melted
4 tsp. brown sugar
2 canned pineapple slices
2 maraschino cherries
1/3 cup flour
3 Tbsp. sugar
1/2 tsp. baking powder
1/8 tsp. salt
dash ground nutmeg
3 Tbsp. milk
1/4 tsp. vanilla extract
Directions

  • Pour 1/2 tsp. melted butter into two 10 oz. ramekins coated with cooking spray.
  • Sprinkle with brown sugar and place the pineapple slices in each dish. Place a cherry in the center of each pineapple.
  • In a bowl, mix the flour, sugar, baking powder, salt and nutmeg.
  • Add the milk and vanilla. Stir until just combined.
  • Pour half of the batter into each ramekin.
  • Bake at 350 degrees F 20-25 minutes until done.
  • Cool for 5 minutes. Run a knife around the edge of the cakes and invert onto plates.
  • Serve.
