- Pour 1/2 tsp. melted butter into two 10 oz. ramekins coated with cooking spray.
- Sprinkle with brown sugar and place the pineapple slices in each dish. Place a cherry in the center of each pineapple.
- In a bowl, mix the flour, sugar, baking powder, salt and nutmeg.
- Add the milk and vanilla. Stir until just combined.
- Pour half of the batter into each ramekin.
- Bake at 350 degrees F 20-25 minutes until done.
- Cool for 5 minutes. Run a knife around the edge of the cakes and invert onto plates.
- Serve.
