Veggie Bars are a great food to serve at any party. Think baby showers, game day food, or dinner parties. They are sure to be a hit!
Last month we guest posted here on my sister Tracy’s Homemade Marshmallow Fondant . If you missed it, then make sure you check it out. It seriously was beautiful! And today it’s my turn to bring you an eye-catching appetizer so let’s get started! Are you famous for a specific recipe that you have? Four years ago, my husband and I moved from Southern California to Utah and soon after I was invited to a potluck brunch. Wondering what I should bring, these Veggie Bars came to mind. Back in California, I had made these a lot and my friends were probably very used to them. But now we were in a new neighborhood and a new community and that meant that all of my recipes were new! YES! I was going to bring these Veggie Bars. I arrived early carrying these beautifully colored, eye-catching bars and the hostess oohed and aaahed appropriately. She had never seen them before. See what I mean? My old recipe had become new! As the guests arrived, these veggie bars were the topic of conversation and I now became famous because of this veggie bar recipe. Martha would be proud. If you’d like to become rich and famous too, okay maybe not rich, but maybe famous for these bars, make these for your next event!
- 2 packages crescent rolls
- ½ cup mayonnaise
- ½ package ranch dressing mix
- 1 (8 ounce) package cream cheese, softened
- Grated cheese
- Suggested Vegetables: cauliflower, diced broccoli, diced zucchini, diced carrot, finely grated celery, diced red peppers or green pepper, diced green onion, cut tomato, diced
- Roll out then press down your crescent rolls into a jelly roll pan with sides.
- Bake at 350 for 10-12 minutes or until golden brown. Blend together mayonnaise, dressing mix and the softened cream cheese until smooth and creamy. Spread over cooled crust.
- Then just start layering whatever veggies you have chosen over the entire crust - garnish with a little grated cheese

It's the powdered ranch dressing mix that comes in a 1 oz packet from Hidden Valley. See the link below for the page on the mfr web site. They're saying to use 1/2 of one of those packets. <br /><br />http://www.hiddenvalley.com/products/dips-and-dressing-mixes/dressing-mixes/original-ranch/

Veggie pizza is a favorite in PA as well. However, instead of using the ranch dressing mixture I use 8 oz. of cream cheese, 8 oz. of salad dressing, 8 oz. of sour cream and 1 packet of Zesty Italian salad dressing. It gives it a different taste than the ranch dressing mixture. (If you want less of a garlic taste use only 1/2 of the packet of salad dressing. Enjoy!

This is a great veggie pizza, We also like the Italian version. I will try the ranch, but it seems like I personally would have to add crisp bacon bits..lol just saying..

Can I make this ahead of time? Will it hold up in the refrigerator overnight? I'd like to make it on a Friday night before a Saturday brunch.

Do they veggies go on raw and the cheese ontop? do you cook it at all or just the crust before topping it? I want to make for a potluck friday!

The veggies go on raw and then you can sprinkle the grated cheese on top. Cook the rolls first (crust) and let cool, then spread with the mix and then add all the raw veggies that you desire! I promise people are going to go nuts over this!

I have been making something like this for years(26) — I call it veggie pizza, I use dill dip rather than ranch .and the Pillsbury baking sheet pressed to reach the sides of the pan (thins the crust out) .I use cherry toms, thinly sliced (looks like pepperoni) ,red onion,broccoli,cauliflower,and shredded cheese It is always the first to go at a pot luck and requested over and over for office

This recipe was delicious!! Added a tad bit more of the ranch dressing package for extra flavor. I would definitely recommend this for a party app.

I make these but add salsa before adding the veggies, you cannot make them the night before if you add salsa as it will make the crust soggy.
