Easy Cheesy Chicken Casserole

I made this Easy Cheesey Chicken Casserole and my children really liked it. My daughter said it tasted like these Chicken Rolls except with noodles instead of crescent rolls. I got the recipe from Gooseberry Patch. Enough said. Plus it has the words Easy & Cheesy in the title. Can’t really go wrong there.

Serves: 8
Ingredients
  • 3-4 chicken breasts, chopped and cooked or 1 (14 oz.) can chicken
  • 16 oz. egg noodles, cooked
  • 24 oz. sour cream
  • 2 cans cream of chicken soup
  • 8 oz. shredded cheddar cheese
  • 8 oz. shredded mozzarella cheese
  • 1 sleeve Ritz crackers, crushed
  • ¼ c. margarine, melted
  • 2 Tbsp. Poppy seeds (optional)
Directions
  1. Combine chicken, sour cream, soup & cheeses in a large bowl; stir to combine.
  2. Add the noodles and gently stir till coated.
  3. Pour into a greased 9x13 baking dish.
  4. Mix crackers and margarine; sprinkle over the top.
  5. Sprinkle with Poppy seeds.
  6. Bake at 350 degrees for 25-30 minutes or till crackers are crispy and golden brown and cheese is melted.

    I am ALL ABOUT easy and cheesy!! YUM. I definitely can trust you when it comes to casseroles Mandy : ) We just ♥'d the Zucchini casserole so much. I'll have to try this one soon!

    Anyone actually try this? I’m a dairy lover, but a pound of cheese & 1.5 pounds of sour cream seems crazy overboard!!

      Yep, it’s correct. Here’s a link to the original recipe if you want to see for yourself. It’s amazing. Feel free to experiment with less cheese and sour cream.

    Hi

    Hi are you suppose to cook the noddles before you put in baking dish also do you cook the chicken? And also can’t you use legs or thighs instead of breast? Thank you

      Yes cook the noodles first as well as the chicken. You can use legs or thighs, too.

    I fixed this last night and was very disappointed. The casserole was bland. It needs some spices to give it more flavor. I may make this again but add garlic and onion powder to it. Any suggestion?

      We don’t find it bland at all! You may try adding garlic and onion or chicken boullion if you like.

    It must be a “Mandy” thing. My grandmother RIP, who was the Comfort Food Queen, was named Amanda. The most delectable smells and tastes came out of her kitchen and you are keeping the tradition alive. Thanks for all the good food and memories they invoke.

    Just cooked a whole chicken and wasn’t sure what I wanted to do with it. You solved my problem. I will make this and the rest will go for a chicken soup. To the person who said it was bland, add some hot sauce to the mix. I add it to everything I make. I don’t use enough to make it hot hot, but it gives it a nice zing. As Emeril would say Kick it up a notch. BAM!
