
Pumpkin Cake with Cider Caramel Sauce
1 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt
3/4 c. oil
1 (15 oz) can pumpkin
2 eggs
Cider Caramel Sauce
1/2 c. brown sugar
1 Tbsp. cornstarch
2/3 c. apple cider
2 Tbsp. heavy cream
1 Tbsp. butter
salt to taste
Directions
- For the cake, combine the sugar, flour, baking powder, baking soda, cinnamon, and salt.
- Add oil, pumkin, and eggs.
- Whisk until blended.
- Pour into a greased 9×13 pan.
- Bake at 325 degrees for 30 minutes.
- For the sauce, in a saucepan, whisk brown sugar and cornstarch.
- Add cider and stir in the cream, butter and salt.
- Cook over med-hi heat, whisking constantly, until large bubbles form around the edge of the saucepan, about 3 minutes.
- Reduce heat to low and allow to thicken, about 2 minutes.
- Top with vanilla ice cream if you want and drizzle sauce over it.

Ok, so I just made this. It's good but I don't think I let the sauce cook enough. I ended up adding some Karo because i didn't have cream and I think it made the sauce thicken too quickly. Anywho, the sauce burned my eyes when i was pouring it over the cake LOL. Is that normal?? You can REALLY taste the vinegar too, it's strong.

Anonymous…there is no vinegar in the recipe. There is apple cider. Try it again and it will make all the difference!<br />

I just made this, but it doesn't look quite like yours. It is still yummy. I was wondering if you are supposed to use Pumpkin Pie filling or Pure pumpkin? Maybe that is the difference in the way it looks? I used Pure Pumpkin. Thanks!
Mine didn't turn out like the photo–it was very dense and would not bake in the middle. The sauce is good, though! I'll make pumpkin bread instead.

I doubled the sauce recipe because I know my husband. I poured the hot sauce over the hot cake in the pan.
I made this last weekend for an early Thanksgiving dinner. It was a hit! The cake is so moist, similar to a sticky toffee pudding density. I did cook it for 40 min's and it was perfect. I also doubled the caramel sauce, and served it with vanilla ice cream. Thanks for the great recipe!!

You just whisk the brown sugar and cornstarch to mix it together and then add the rest 🙂
