Another zucchini recipe? Yes, I know but tis the season, right? A girl made this at our church party and it was excellent. She made hers in a dutch oven in the coals of a fire, but I made this in a skillet on my stove. Both are great, but I prefer the dutch oven method.
Zucchini and Chicken Stir Fry
1 onion, chopped
1 or 2 pounds of boneless, skinless chicken breast cut into chunks
1 zucchini, cut into chunks
1 can pineapple tidbits (I drained mine, but I’m not sure if she did…)
Heat oil in skillet or dutch oven and add chopped onion. Cook a bit and then add the chicken. Cover and cook part way and add zucchini. Cover again and cook til zucchini and chicken are done. Add pineapple and teriyaki sauce (I used almost a whole bottle, just do how much you like) and heat through. Serve over rice.
-You could also add whatever else you like. Bell peppers, carrots, etc.
