Pumpkin Spice Bars taste a bit like pumpkin pie. With a shortbread crust and pumpkin butter filling, these will be a tasty fall treat for your family and friends.
Pumpkin season is the best season next to all the Christmas goodies season. I love pumpkin everything. Bring. it. on. I made my first pumpkin recipe of the season back in August. It was like coming home. I found a recipe for Pumpkin Butter and knew I had to make something with it because yum. My friends over at High Heels and Grills have never done me wrong before. I halved their recipe for these bars. This shortbread crust and topping is so easy to make and goes perfectly with the pumpkin butter. Make it and fall in love!
- Bars
- 2½ cups flour
- 1½ cups oats
- 1 cup powdered sugar
- 1 tsp. baking powder
- ½ tsp. salt
- 1½ tsp. pumpkin spice
- 1½ cups butter, softened
- Pumpkin Butter
- 15 oz. can pumpkin puree, NOT pumpkin pie filling
- ⅛ cup apple juice
- ½ cup granulated sugar
- 1 tsp. ground ginger
- ⅛ tsp. ground cloves
- 1 tsp. cinnamon
- 1 tsp. ground nutmeg
- Pumpkin Butter
- Place all ingredients in a saucepan and stir to combine.
- Bring to a boil, reduce heat to medium low and let simmer 30 minutes. Stir often until thickened.
- Bars
- Mix together flour, oats powdered sugar, baking powder, salt and pumpkin spice. Add in the butter and mix until large clumps form.
- Press ¾ of the dough into a greased 9x13 baking dish.
- Spread 1½ cups Pumpkin Butter over crust and crumble remaining dough over the top.
- Bake at 350 F 40-45 minutes until top is lightly browned.

I honestly would eat them both separately- The crust then the pumpkin butter- They both sound so good!!!
