Roasted Carrots

  • 2 lbs Multi Colored Mini Carrots
  • 2-3 TBSP Extra Virgin Olive Oil
  • Sea Salt
  • Freshly Cracked Pepper
Directions
  1. Preheat oven to 400 degrees.
  2. Place carrots onto a large baking sheet and drizzle with olive oil.
  3. Toss to coat and make sure carrots are in a single layer.
  4. Sprinkle with salt and pepper.
  5. Roast for 15-20 minutes until carrots are tender and golden brown.
  6. Serve immediately.
