Lemon Oatmeal Bars

Ingredients
  • Crust and Topping:
  • 1½ cups all-purpose flour
  • 1 cup oats
  • ½ cup light brown sugar
  • 1 teaspoon coarse Kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 cup (2 sticks) cold butter, cut into pieces
  • Filling:
  • 1 can lemon Lucky Leaf fruit filling
Directions
  1. Preheat the oven to 375. Spray a square 9x13 baking dish with nonstick
  2. spray.
  3. In your food processor, or with a pastry cutter, combine the
  4. crust/topping ingredients until pea-sized pieces of butter remain.
  5. Reserve 1 ½ cups of the crumbs for the topping (chill in the
  6. refrigerator until needed), and press the remainder of the crumbs
  7. firmly against the bottom of the baking dish. Bake crust for 20-30
  8. minutes.
  9. After the crust has baked, remove from the oven.
  10. Reduce oven temperature to 350. Spread the fruit filling over the hot
  11. crust. Sprinkle the reserved crumbs over the fruit filling and bake for
  12. an additional 15-20 minutes until topping is golden brown.
  13. Let cool on the counter for at least two hours to set before slicing into
  14. squares.
