Snickerdoodle Apple Cups

Serves: 24
- ½ c. shortening
- ½ c. softened butter
- 1½ c. sugar
- 2 eggs
- 2¾ c. flour
- 2 tsp.
- Cream of Tartar
- 1 tsp. baking soda
- ¼ tsp. salt
- 1 can Caramel Apple Lucky Leaf Fruit Filling
- Mix the shortening, butter, sugar and eggs. Add the dry ingredients.
- Shape into 1.5" balls. Roll in cinnamon and sugar mixture of 2 Tbsp. sugar and 2 tsp. cinnamon.
- Place into greased muffin tins.
- Bake at 400 degrees for 8-10 minutes. Do not over bake!
- Remove from oven and remove cookie cups from pan and place dollops of apple filling onto each cup while warm.
- Sprinkle with a garnish of ground cinnamon before serving.
Cut apple pieces into smaller pieces before placing onto cookie cups.
