Snickerdoodle Apple Cups

Ingredients
  • ½ c. shortening
  • ½ c. softened butter
  • 1½ c. sugar
  • 2 eggs
  • 2¾ c. flour
  • 2 tsp.
  • Cream of Tartar
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 can Caramel Apple Lucky Leaf Fruit Filling
Directions
  1. Mix the shortening, butter, sugar and eggs. Add the dry ingredients.
  2. Shape into 1.5" balls. Roll in cinnamon and sugar mixture of 2 Tbsp. sugar and 2 tsp. cinnamon.
  3. Place into greased muffin tins.
  4. Bake at 400 degrees for 8-10 minutes. Do not over bake!
  5. Remove from oven and remove cookie cups from pan and place dollops of apple filling onto each cup while warm.
  6. Sprinkle with a garnish of ground cinnamon before serving.
Notes
Cut apple pieces into smaller pieces before placing onto cookie cups.
