Mini Pumpkin Bread Loaves

Ingredients
  • 1 cup firmly packed brown sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1½ cup canned pumpkin NOT pumpkin pie filling
  • 1½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1½ cup mini semi-sweet chocolate chips
Directions
  1. Preheat the oven to 350 degrees F. Grease 3 mini loaf pans.
  2. Cream together the brown sugar and butter. Add the eggs and mix again.
  3. Add the pumpkin and mix until well combined.
  4. Add the rest of the ingredients. Mix until just combined. Add the mini chocolate chips. Mix.
  5. Spread into mini loaf pans and bake 40-50 minutes until a toothpick inserted comes out clean.
  6. Remove from oven and cool in pans 10 minutes before removing to a wire rack.
  7. Store refrigerated.
Notes
You can make this into one regular sized loaf. Just adjust the baking time.
