Mini Pumpkin Bread Loaves

Serves: 3 loaves
- 1 cup firmly packed brown sugar
- ½ cup butter, softened
- 2 eggs
- 1½ cup canned pumpkin NOT pumpkin pie filling
- 1½ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1½ cup mini semi-sweet chocolate chips
- Preheat the oven to 350 degrees F. Grease 3 mini loaf pans.
- Cream together the brown sugar and butter. Add the eggs and mix again.
- Add the pumpkin and mix until well combined.
- Add the rest of the ingredients. Mix until just combined. Add the mini chocolate chips. Mix.
- Spread into mini loaf pans and bake 40-50 minutes until a toothpick inserted comes out clean.
- Remove from oven and cool in pans 10 minutes before removing to a wire rack.
- Store refrigerated.
You can make this into one regular sized loaf. Just adjust the baking time.
