Stuffed Pasta Shells

Ingredients
  • 1 (12 ounce) package jumbo pasta shells
  • 2 eggs
  • 1 (32 ounce) container ricotta cheese
  • 16 oz. shredded mozzarella cheese, divided
  • 8 oz. shredded Parmesan cheese, divided
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 (24 ounce) jar Ragu pasta sauce
Directions
  1. Preheat oven to 350 degrees F.
  2. Bring a large pot of water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. In a large bowl, combine eggs, ricotta, half the mozzarella, half the Parmesan, salt and pepper. Stir until all mixed together.
  4. Spoon ricotta mixture into cooked shells and place in a 9x13 inch baking dish.
  5. In a medium bowl, stir together pasta sauce and reserved mozzarella and Parmesan. Spread over stuffed shells.
  6. Bake in oven 1 hour, until edges are bubbly.
