Peanut Butter Cups

Ingredients
  • 1 cup creamy peanut butter, divided
  • 1 Tbsp. butter, softened to room temperature
  • ½ cup powdered sugar
  • ½ tsp. salt
  • 3 cups milk chocolate chips
  • chocolate sprinkles, optional
Directions
  1. Line 2 mini muffin pans with 36 mini liners. Set aside.
  2. With a handheld or stand mixer, beat together ½ cup of the peanut butter, butter, powdered sugar and salt on medium speed in a medium sized bowl or the bowl of your stand mixer for 3 minutes until smooth. It may look crumbly at first but it comes together. Set aside.
  3. Mix together the chocolate chips and remaining ½ cup peanut butter in a heatproof bowl. Melt in the microwave on 50% power in 20 second intervals, stirring after each interval.
  4. Drop 1 tsp. of the chocolate mixture into each mini muffin cup. Shake pan carefully back and forth to even out.
  5. Next, measure out 1 tsp. of peanut butter mixture and place into muffin cups. Top all with another tsp. of chocolate mixture. Shake pans gently again to settle the chocolate. Decorate with sprinkles if desired.
  6. Refrigerate for 15 minutes, or until chocolate is set.
  7. Store in a covered container in a cool place. The fridge is ideal.
Notes
You can keep these in the fridge for 1 week or up to 2 months in the freezer. These make great treats for the holidays!
