Serves: 16
Ingredients
½ cup unsalted butter
3 medium to large ripe bananas
¾ cup brown sugar, packed
1 large egg
2 tsp. pure vanilla extract
2 cups all purpose flour
½ tsp. kosher salt
1½ tsp. baking soda
Directions
Brown the butter in a small saucepan over low heat. Simmer for about 5 - 10 minutes until it is browned and fragrant. Remove from heat and allow to cool to room temperature.
Mash the bananas in a medium bowl. Add the brown sugar, egg, and vanilla extract. Whisk to combine. Pour in the browned butter, including the browned bits and whisk until incorporated.
In a large bowl, combine the flour, salt and baking soda. Pour the banana mixture into the flour and stir until JUST COMBINED.
Preheat oven to 350 degrees F. Spray a 9" loaf pan with cooking spray, set aside.
Pour batter into the prepared pan and bake for 45 - 50 minutes or until golden brown and a toothpick inserted into center comes out clean.
Remove to rack and let cool in pan for 10 minutes, then invert the bread onto a wire rack and allow to cool to room temperature before slicing.
