Brownie and Berry Parfaits

  • 1 cup butter, melted
  • ½ cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1 cup SPLENDA® Sugar Blend
  • 4 large eggs
  • 4 teaspoons vanilla extract
  • strawberries
  • blueberries
  • mini marshmallows
  • whipped topping, optional
Directions
  1. Preheat oven to 350° F. Line a 9x13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
  2. In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth. You can also use a large mixing bowl and a hand mixer.
  3. Add the flour and sugar. Mix together and add the eggs and vanilla. Mix until just combined. Don't over mix. (Batter will be thick)
  4. Pour batter into prepared baking dish and spread out evenly.
  5. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
  6. Let cool 20 minutes and then place in the fridge to cool completely. It makes them easier to cut.
  7. Cut brownies into bite sized squares.
  8. Layer brownies, berries and marshmallows in small glasses. Top with whipped topping. You can also skewer them onto wooden skewers, alternating the brownies, berries and marshmallows.
