Sweet Potato Fries

Ingredients
  • 2 large sweet potato fries
  • 1 Tbsp. cornstarch
  • 1 Tbsp. olive oil
  • salt and pepper
  • ½ cup butter, melted
  • ¼ cup SPLENDA® Brown Sugar Blend
Directions
  1. Peel and cut the sweet potatoes into strips. Soak in a bowl of cold water for 1 hour. Drain and place potatoes on a paper towel to drain off excess water. Pat dry.
  2. Place cornstarch into a gallon sized zip close bag and add sweet potatoes. Close and shake to coat.
  3. Place sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Toss with your hands to coat. Bake at 425 degrees F. for 15 minutes.
  4. Turn with a spatula and bake another 10-15 minutes until done.
  5. Make dipping sauce with melted butter and SPLENDA® Brown Sugar Blend by stirring togerher until dissolved. Let cool while fries bake if desired and stir again for a thicker sauce.
  6. Serve and enjoy.
