Peel and cut the sweet potatoes into strips. Soak in a bowl of cold water for 1 hour. Drain and place potatoes on a paper towel to drain off excess water. Pat dry.
Place cornstarch into a gallon sized zip close bag and add sweet potatoes. Close and shake to coat.
Place sweet potatoes on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Toss with your hands to coat. Bake at 425 degrees F. for 15 minutes.
Turn with a spatula and bake another 10-15 minutes until done.
Make dipping sauce with melted butter and SPLENDA® Brown Sugar Blend by stirring togerher until dissolved. Let cool while fries bake if desired and stir again for a thicker sauce.
Serve and enjoy.
