Triple Chocolate Chunk Cookie Bars

- ½ cup (1 stick) unsalted butter, room temperature
- ½ cup brown sugar
- ¼ cup caster sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup plain flour
- ½ teaspoon baking soda
- ½ teaspoon cornflour
- ½ cup cocoa
- 1 tablespoon milk
- ½ cup dark chocolate chunks
- ½ cup white chocolate chunks
- Grease a 9 inch square baking tin and line with baking paper so two sides overhang.
- Preheat the oven to 360 F (180 degrees).
- In a large mixing bowl, add the butter, brown sugar and caster sugar and beat with an electric mixer until combined.
- Add the vanilla and the egg and beat for a minute until combined.
- Sift in the flour, baking soda, cornflour and cocoa into the mixture and stir.
- Add the tablespoon of milk and then mix in both the dark chocolate and white chocolate chunks.
- Spoon the chocolate mixture into your prepared tray and smooth the top with a spatula.
- Bake in the oven for approximately 22 minutes or until firm on the edges but still soft and tender in the middle.
- Leave to cool for 10 minutes or so before transferring to a wire rack to cool completely.
- Divide into squares and enjoy with a cold glass of milk. I also recommend devouring one still warm from the oven!
