  • ½ cup semi-sweet chocolate chips,
  • 1 – ¼ cups of pecan halves
  • ⅓ cup unsalted butter, melted
  • ½ cup corn syrup
  • ⅓ cup granulated sugar
  • 1 egg
  • ¼ teaspoon salt
  • 1 teaspoon cornstarch

  • 1 ¼ cups all purpose flour
  • 1 tsp baking soda
  • ¼ teaspoon salt
  • ½ cup butter , softened to room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup peanut butter
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips
  • ¼ cup peanut butter chips

  • 1 ¼ cups all purpose flour
  • ¾ cups old fashioned oats
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter , softened to room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup peanut butter
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips
  • ¼ cup peanut butter chips
Directions
  1. Preheat oven to 350ºF and grease the bottom and sides of a 9-inch cast-iron skillet or 9” round baking pan with cooking spray or butter.
  2. Whisk together melted butter, corn syrup, sugar, egg, salt, and cornstarch in a large bowl. Set aside.
  3. In a large bowl, whisk together the flour, baking soda, and salt. Stir in the oats. Set aside.
  4. Using your stand mixer or handheld mixer, cream butter, granulated sugar, brown sugar and peanut butter beating on medium for 2 minutes. Add egg and vanilla and mix until well incorporated.
  5. Turn mixer to low speed, add the dry ingredients to the wet ingredients and mix until combined. Fold in the chocolate and peanut butter chips.
  6. Press the cookie dough into the prepared skillet. Sprinkle the center with chocolate chips, then top with a single layer of pecans and pour the caramel filling over the top.
  7. Bake for 25 to 30 minutes, until the edges are crisp and the cookie is golden and cooked through. Remove from oven. Serve warm and with a scoop of vanilla ice cream if desired.
